Recipe Monday – Sloppy Joe Hash Brown Casserole

I get excited when I find a recipe that’s both comforting and high in protein. Sometimes I just don’t want to eat big hunks of meat. So when I came across this casserole, the kid in me got super excited. It’s tasty and easy to make. I like pairing it with a side of broccoli.

Sloppy Joe Casserole

Sloppy Joe Hash Brown Casserole

Ingredients:

  • 20 oz. 93% lean ground turkey
  • 1 can sloppy joe mix
  • 1 cup frozen corn
  • 1 cup mild cheddar shredded cheese
  • 1/2 package frozen hash brown potatoes (about 15 oz.)

Directions:

  • Preheat oven to 450 degrees
  • Cook turkey in skillet, breaking up larger pieces
  • Once turkey is cooked through, add sloppy joe mix and corn
  • Pour turkey mixture into 9 x 13 baking dish
  • Top with shredded cheese
  • Top with hash browns
  • Bake for 20-30 minutes until potatoes start to brown
